Brews with Bates
Staying true to its commitment to supporting local, TRACE is joining forces with the coveted North Austin eater, Noble Sandwiches, to benefit the Sustainable Food Center (SFC). Brews with Bates is a collaborative three course menu by W Austin’s executive chef Nadine Thomas, TRACE’s executive pastry Chef Janina O’Leary, and locally and nationally acclaimed guest chef, John Bates of Noble Sandwiches. The evening of food and local brews will also feature a pre-dinner reception with specialty beer-cocktails by W Austin’s libationist, Joyce Garrison as well as live-musical entertainment by Twilight Trio.
The one-night-only special menu will be accompanied by pairings from local breweries Live Oak, Independence Brewing and 512. Utilizing some of the best local and seasonal fare from TRACE’s go-to local purveyors as well as SFC’s group of favorite regional farms, the menu will include: Milk-braised guinea hen and galantine with Napa cabbage, shaved red carrots, fried spinach and a smoked potato broth; tasting of Windy Hills Goat with crispy fried ribs with brown ale glaze, seared pastrami, spiced belly and citrus-crusted loin, gristmill corn grits, with market vegetables; rocky road with pecan porter fudge swirl ice cream and Maldon, caramel marshmallow.
A portion of proceeds from the dinner will directly benefit SFC fundraising efforts helping the organization reach the final $1 million of their $4.5 million capital campaign goal. With the goal of building a home of its own, the new SFC will include a 7,000-square-foot building with a state-of-the-art teaching kitchen and a 2.3-acre teaching and community garden to provide hands-on training for food garden leaders, offering over 70 community garden plots available for East Austin residents.
