Eberly presents Beef & Burgundy Wine Pairing Dinner

Eberly will present a chef collaborative dinner with Mathew Peters, 2017 Bocuse d’Or winner and Eberly’s Chef de Cuisine Jo Chan. The menu features a six-course, large format family-style dinner showcasing the best cuts of Texas Wagyu beef from Ranger Cattle Ranch. Each course will be perfectly paired with wines from some of France’s best Burgundy houses, curated by Eberly sommelier Krista Church.

Guests will be welcomed by a cocktail reception of passed canapés in the Cannon Room, behind the Cedar Tavern bar, followed by a family-style dinner in the greenhouse-esque Study. The dinner will feature dishes like Short Rib Tostada with chile piquin-hibiscus smoked short rib, charro bean tostada, avocado and radish and Herb Crusted Ribeye with black garlic, rosemary and parsley, finished with Brown Butter Financier with preserved cherries, dulcey crémeux, pistachio and sourdough tuile, paired with a house-made Crême de Cassis.
