Isla Austin presents First Day of Summer Pig Roast

The team at Isla is roasting up a Lechona - a traditional Colombian roasted pig serving during the holidays. Stuffed with fragrant saffron rice, yellow peas and marinated pork, the Lechona is placed in the oven for a slow roast lasting four to five hours. Once ready, the pig is served with cracklins.

You can wash down all that delicious pork with The Mouth of a Sailor, a special featured cocktail from Miguel made with Sailor Jerry Rum, allspice dram, honey and lime, served over ice.
