Uncle Billy’s will tap a firkin of its newly released Schizopetal honey hibiscus pale ale that is cask-aged with sprigs of fresh chocolate mint for 20 days. Brewer Gino Guerrero gently spanked the chocolate mint leaves to release the oils to infuse the beer with a light freshness. The pale ale has a gorgeous light red color and slight tartness from the hibiscus petals, and delicate bitterness from noble hops. The bitterness is balanced with a touch of caramalt, and kiss of sweetness from locally-made Round Rock honey. It is a ridiculously refreshing beer on a hot summer day with a nice, dry finish.
