Luke's Inside Out

To replace the Official Muncher at Gibson Bar, Luke's Inside Out trailer had big shoes to fill. However, Luke's did so flawlessly with a menu of "Inside Out" sandwiches. Chef Luke Bibby has been in the catering business for years and finally decided to open his own wonderful, twisted trailer. Bibby serves pork, beef, shrimp, chicken and other sandwiches on soft French loaves from Phoenica, which he slices in half, coats with Parmesan and toasts on the flat-top grill. The sliced side then becomes the outside of the sandwich, hence the "Inside Out" angle. The Cow, The Pig and The Ceaser are particular crowd pleasers, but also available are appetizers, soups and daily specials. Luke's Inside Out will deliver your order right to the bar at the Gibson, where you can enjoy the fresh air and wash down your sandwich with a cold one.
