Located in Northwest Austin, Interstellar BBQ takes a simple approach to barbecue that has resonated with Texans. Lead by Ray Hernandez, the Interstellar team sources only top-notch ingredients, including the post oak wood for smoking. Pitmasters John Bates and Warren McDonald use an offset smoker for their low-and-slow method and swear that shortcuts are a sin. The sausage is a local favorite, made in-house with an equal blend of brisket and ground-pork shoulder.
