Fatback Boucherie's April Fools crawfish boil offers Cajun cuisine for a goodcause
April Fool's Day brings an opportunity to try new Cajun trailer cuisine while supporting a local family in need. Mike Rivera, owner of Fatback Boucherie, will be welcoming the new month with a fundraiser for his girlfriend Lynn, who was recently diagnosed with breast cancer at the age of thirty-three.
The day is a great opportunity to check out the innovative food trailer, which specializes in concocting Cajun and French-inspired charcuterie alongside southern Louisiana specialties, while supporting a great cause.
In Mike’s words: “If there was ever a good time to sample what I (Fatback Boucherie) and the other trailers do, this would probably be it. I'll have crawfish, and there are a couple bands slotted to play, and we will feature free Live Oak brew.”

The fundraiser will start at 11 a.m. and roll on into the afternoon. NicoSounds and Candler Asbury will provide plenty of tunes (along with a few surprise guests), and during the fundraiser, Jessie Street Eats anticipates debuting one — if not two! — new food trailers. Spoiler alert: one serves Vietnamese, the other hot dogs.
The new variety will perfectly complement the trailer park's already eclectic lineup, which Fatback has helped cultivate with it's inspired menu.
“Every weekend we have a different gumbo and house made boudain," Mike notes. "We will also have oysters and cracklins ' this weekend, so come down and give us a try. If you can't make it April first, you’re welcome anytime.”
