So happy together: Slow Food Austin knows the virtues of pairing beer withcheese
When you think about cheese (which we do frequently), the first beverage that comes to mind is generally wine. But Slow Food Austin’s 3rd Annual Beer + Cheese tasting event on Thursday, December 15th hopes to add some diversity to your liquid arsenal. After all, wine is certainly not the only libation to enjoy with your manchego or muenster.
Slow Food Austin is the local branch of an international movement aimed at reconnecting people with the food that they eat. Through educational initiatives, social activities, fundraising events and volunteer projects, the chapter celebrates those who are moving the needle in terms of their dedication to sustainable practices in the local food community. The event is the organization’s holiday fundraiser and is done in conjunction with local establishments Antonelli’s Cheese Shop and (512) Brewing Co.
“Antonelli's Cheese Shop and (512) Brewing embody Slow Food ideals,” says Slow Food Austin Social Chair Karla Loeb. “(512) Brewing Company uses as many local, domestic and organic ingredients as possible... organic barley, local pecans and domestic wheat. [They also go] above and beyond conventionally accepted levels of sustainable and organic brewing practices. In two years [Antonelli’s] has done what most businesses hope [to do] in ten... cornered the market as the cheese store in town by carefully choosing small artisan cheeses, charcuterie, preserves and small production wines and beers. Through their daily sourcing decisions, both businesses espouse Good, Clean and Fair, and promote sustainable business practices," Loeb adds.
This year’s tasting event will be led by John and Kendall Antonelli of Antonelli’s and Kevin Brand, owner of (512). It will feature six carefully selected artisan cheeses, five specialty beers and a selection of complementary snacks to munch on while discovering the joy of matching brews to brie.
“The flavor and mouth-feel of cheese is often characterized by a rich fattiness that coats the tongue and palate, making perfect pairings difficult to achieve,” notes Kendall Antonelli. But perfection is never as much fun as the surprise-filled journey in search of it.
“The effervescence in beer cuts through that richness allowing for a combination of flavors to develop on your taste buds. Also of importance is the fact that we do most of our tasting through our nose. The effervescence simultaneously lifts the flavors and aromas — of both the cheese and the beer — off the tongue sending them towards the olfactory without any premeditated thought, making cheese and beer pairings a tasty and approachable experience for anyone.”
So what is it about these two that work so well together? Well for one, the flavor profiles of beer and wine are completely different. But beer and cheese? Not so different. In other words, because beers tend to possess similar taste profiles in comparison to many cheeses, consuming them together is more like a harmony of flavors rather than a study in contrasts.
So which specific combinations can ticket holders expect to try at the event? The folks at Slow Food aren’t divulging their pairing secrets just yet, but they do promise an evening of merriment and cheese tasting "rule-breaking." You’ll surely walk away knowing you’ve supported a worthy cause and beefed up on your food and beverage knowledge.
“Thanks to the rise in the number of American artisanal cheese producers, as well as craft breweries, pairing cheese and beer has never been more fun or delicious,” adds Kendall Antonelli.
