Austin's favorite chef Paul Qui announces new South Congress restaurant
It appears Paul Qui is returning to his Uchiko roots. The Top Chef winner revealed to Austin-American Statesman food writer Matthew Odam that he will be opening a new restaurant, Otoko, in the South Congress Hotel this summer.
Qui is partnering with Violet Crown Management's Jesse Herman for this new endeavor. Herman, whose hospitality group owns the South Congress Hotel, cut his culinary teeth locally as co-owner of La Condesa and Sway.
According to the Statesman, Otoko will have a 12-seat counter area and a 15-20 dish tasting menu consisting of "a mix of raw and cooked small bites, with an emphasis on sushi." With such a small restaurant, Qui says Otoko will feature only the freshest fish, mostly sourced from Japan.
FÖDA, the design studio behind the entire South Congress Hotel project, will be branding the restaurant. Dick Clark + Associates and Michael Hsu Office of Architecture are providing the architectural design for the South Congress Hotel.
