We just finished writing the menu for our 5th pop up restaurant event. Theme is Terlingua so it's time to get out the giant chili kettles and dust off our Texas Red recipe.
We've been banging out pots of Texas Red since the 90s and we are strict constructionists when it comes time to make a batch. Pure beef, some chile powder and that's about it. We don't want Dory Funk coming down from Amarillo to set us straight, so we'll be leaving the beans and what have you in the pantry.
On the menu: Texas Red Chili-pure Texas beef, Mexican Chili-pintos and smoked pork ribs, Stuffed Chile Poblano, Fritos, Hand Made tamales, Hand Made tortillas, and Chocolate Embolism Bread Pudding (so chocolate-y, if you don't immediately have an embolism we'll cheerfully refund your money.)
