The menu will start with amuse bouche, followed by four courses including “Pig on Bourbon,” a barbecued, smoked pork shank with sprouting broccoli, apple crème and pork scratching; bourbon float with vanilla and sorbet lard, then a BBQ beef rib with roasted corn wild rice, micro coleslaw and red swiss chard.
