Visiting chefs and sisters Delfina and Elide founded a women's cooperative just outside of Merida that empowers women to develop and market spices from plants grown in the region. The sisters also teach culinary methods they've perfected over the years to other, aspiring chefs.
Patrons will enjoy an evening that begins with a welcome cocktail and brief introduction. The evening's First Course features a lush Citrus Salad, followed by a Milpa Soup made with hearty squash and white corn blended with just the right amount of pumpkin seed powder. The evening's main course is a unique baked tamale which combines pork, chicken and soft beans that is extraordinary. Dessert is a candied squash buried with piloncillo, cinnamon and cloves. A specially-selected wine completes this memorable Yucatacan feast.
