Thunderbird Coffee team to bring biscuit sandwiches to bustling Manor Road
Austinites may obsess about breakfast tacos like Claire Danes obsesses about terrorists on Homeland, but soon we will have to make room for a new morning treat. Bird Bird Biscuit, a new fast casual spot on bustling Manor Road, will open in spring 2018 with a menu inspired by the vibrant food scenes in Los Angeles and Nashville.
The project, led by former Thunderbird Coffee general manager Brian Batch and Thunderbird owner Ryan McElroy, is converting a 1950s industrial space at 2701 Manor Rd. into a casual restaurant offering flaky biscuit sandwiches for breakfast and lunch. Batch describes the upcoming concept as a “love letter” to the Southern staple.
But since spring 2018 is a long time to wait for a taste, Bird Bird will be having its first pop-up at nearby Patrizi’s food truck on November 18 from 9-11 am. The pop-up will offer a limited menu including a fried chicken biscuit; the Breakfast Classic with house chicken sausage, fried egg, and Sriracha mayo; and a simple bacon, egg, and cheese.
“Serving someone something excellent is secondary to treating them excellently. I want life to be the business of spreading joy, and business to be a life lived joyfully,” says Batch in a release. “And it doesn’t hurt to make a killer biscuit sandwich.” Personally, we can’t think of a better motto.
