Austin's plant-based fine dining leader Fabrik settles into new home
This dish featured scalloped local potato, dill puree, lemongrass hollandaise, a fennel and cabbage slaw, and pepper gel.
Fabrik, Austin’s game-changing plant-based fine dining restaurant, has settled into a new home in Tarrytown. The new space has a larger capacity and an open kitchen that brings diners closer to the preparation of Fabrik's seasonal tasting menus.
The new location opened July 13 at 3108 Windsor Rd. in the Tarrytown Shopping Center, with parking along Windsor Road and in the lot behind the center. Its dining room seats 18 guests at each of two nightly seatings, or 36 customers per evening. At the former East Austin location, guests were divided among separate dining areas. The Tarrytown space places everyone in one larger room overlooking an open kitchen, while a second kitchen in the back gives the culinary team more room to experiment.
“Guests can see us plating and on the bar throughout service,” owners Je and Silas Wallerstein write in an email to CultureMap. “It creates a really fun, interactive, and energetic atmosphere during service.”

Fabrik serves fixed, fully plant-based tasting menus rather than à la carte dishes. All guests follow the same progression of courses, although a gluten-free version is available with advance notice.
Fabrik introduces a new menu every three months, using local Texas produce as its foundation and inspiration. Some of the eight-course summer menu’s more distinctive dishes include scalloped local potato with dill puree and lemongrass hollandaise; mushroom cappelletti with corn cream, maitake mushrooms, and cornbread madeleines; and banana miso mousse with roasted banana compote and black sesame sablé (shortbread biscuit).
The tasting menu costs $105, with an optional wine pairing for an additional $65.The beverage program emphasizes vegan, biodynamic, and organic wines.
The Wallersteins source from local growers and provisioners whenever possible, and they grow their own greens and garnishes in the restaurant's hydroponic gardens or even source through foraging. The kitchen tries to use as much of each ingredient as possible and composts what remains.

All of Fabrik’s former employees moved with the restaurant, and several new staff members have joined as the operation has grown. The owners say repeat customers have followed them to Tarrytown, where they have received a warm welcome from the surrounding neighborhood and Community Kitchen & Taproom, a vegan restaurant that specializes in Southern food and is also a newcomer to the neighborhood.
Fabrik first opened on East Martin Luther King Jr. Boulevard in August 2023. Chef and co-owner Je Wallerstein, who previously worked at Italian restaurant Juniper, opened it with her husband, co-owner and restaurant manager Silas. CultureMap named it one of the staff’s favorite meals of 2023. Fabrik went on to compete for Best New Restaurant in CultureMap’s 2024 Tastemaker Awards and join the Michelin Guide’s list of recommended Austin restaurants in 2025.

Dinner is served from 5:45-10:30 pm Mondays, Tuesdays, Thursdays, and Fridays, with fixed seatings at 5:45 and 8:30 pm. The experience can last up to two and a half hours, and children younger than 12 are not accommodated. Fabrik is reservation-only, although diners can text about last-minute availability. Parties of up to six can book online. The restaurant can also host private events for up to 22 seated guests or 40 people at a more casual gathering.
