Eight months after Austin's beloved Salt and Time butcher shop and farm-to-table restaurant closed, its replacement – Radius Butcher & Grocery – is opening its doors on Wednesday, March 12.

Radius took over the 3,100-square-foot former Salt and Time space at 1213 East 7th St. in July 2024, aiming to be a convenient one-stop shop for locals to buy seasonal produce and high quality meat.

The shop promises a curated selection of seasonal produce, dry goods, dairy, meat, and seafood sourced mainly from Texas farms. The store will also offer Texas-made beer, wine, and cider.

As a nod to its predecessor, Radius is partnering with the same farms and ranches that Salt and Time did. Faithful Salt and Time patrons will recognize Peaceful Pork and Greener Pastures Chicken among the brands that will be available at Radius, as well as iconic Central Texas brands Trosi Farms, Mill-King, Peeler Farms, and many others.

The shop will also provide vegan-friendly protein alternatives.

According to a press release, the Radius team is prioritizing sustainability through its partnership with farms that employ whole animal utilization and follow regenerative practices like holistic soil care, pastured livestock, low or no till fields, cover crops, compost fertilizer, crop rotations, and water management.

The team also spent a year researching and embarking on field visits to find high quality producers and farms that have "an overall appreciation for the interconnected ecosystem of soil health, water, livestock, and plants."

"Whole animal butchery is a core philosophical belief of mine. There’s a purity to knowing exactly where your food comes from, and honoring every part of the animal," said general manager and head butcher Joe Saenz in the release. "There's a great responsibility in harvesting an animal, and it's our passion to honor the entire sacrifice by highlighting and elevating every part of the animal. We will offer the highest quality cuts, grinds, sausages, charcuterie, and stocks to our customers, and tell the stories of the farms we work with."

Whole animal utilization and regenerative farming practices are key components to reducing food waste, which is one of the hot topics being discussed at South by Southwest this year.

Radius will provide online and in-store recipe cards that are custom made for its in-season meat and produce. The shop will also host farmer dinners, guest chef dinners, and cooking classes for locals interested in learning more about farm-to-table cooking.

After its March 12 opening, Radius Butcher & Grocery will be open seven days a week from 10 am to 8 pm.
