Bar Ilegal: Dunlap adds a Mezcal mixer to the Rainey Street clan

The Rainey Street revolution continues as savvy bar entrepreneur Bridget Dunlap gets set to unleash her next big concept south of Caesar Chavez. Bar Ilegal hits the scene next week with an eye for one artisanal spirit only: Mezcal.
This sensual smoky offshoot of tequila made from the maguey agave plant in Mexico has slowly gained fame among amateur cocktail enthusiasts in recent years, and has an fervent cult following of aficionados all its own. And now, Bar Ilegal arrives to suit the smooth sipping Mezcal palates in us all.
Bar Ilegal will open as a Mexican-style cantina in a small historic building next to Dunlap’s Clive Bar at the corner of Davis and Rainey Streets and will serve only handcrafted, small-batched Ilegal Mezcal, made by mezcaleros in Oaxaca, Mexico.
Known as one of the top-quality mezcals available in the United States, Ilegal Mezcal is made using the heart of the espadin agave plant that is baked underground over volcanic rock, then crushed by a traditional millstone drawn by a horse. It is distilled in small batches and hand-bottled and numbered. Ilegal’s resulting Joven, Reposado and Añejo mezcals provide a smooth, smoky flavor and beautifully reflect the spirit and culture of Oaxaca.
Bar Ilegal will serve Ilegal Mezcal flights as well as individual sippers, and will likely add a variety of mezcal cocktails and infusions down the line. Additionally, the drink menu will include Victoria Beer, widely known as one of the oldest Mexican beers.
