Star Austin chef Jesse Griffiths nominated for James Beard book award

Jesse Griffiths' The Turkey Book is getting major recognition.
The James Beard Awards are the biggest annual event in the Texas culinary scene, and a whole section is dedicated to books. This year Chef Jesse Griffiths of Dai Due has secured a nomination for his 2024 cookbook, The Turkey Book: A Chef’s Journal of Hunting and Cooking America’s Bird.
Most readers could have guessed Griffiths was up for another nod from the James Beard Foundation, since The Turkey Book is a descendant of The Hog Book: A Chef's Guide to Hunting, Butchering and Cooking Wild Pigs, which won in 2022. The two are published by St. John Press, an independent imprint that has only published books in the series of two so far.
These awards are wrapped in several layers of categorization: first the James Beard Awards, then the 2025 Media Awards, then the book awards, and finally when it comes to The Turkey Book, the Single Subject category. Single Subject books include "recipes focused on a single ingredient, dish, or method of cooking," according to a press release announcing the nominees.
Described as a "coast-to-coast journal," The Turkey Book contains more than 100 recipe, instructions of preparing a turkey from plucking, to skinning, to butchering, and 250 color photographs.
Some Austinites may know what to expect from the recipes after getting familiar with Dai Due, a highly regarded East Austin restaurant that places a strong emphasis on local ingredients, especially those that are hyper-seasonal, creatively sourced, or preserved. However, whereas Dai Due became famous for elevating frontier-minded home cooking to upscale dining, the book brings things back home.
Both Griffiths and Dai Due are nominated for 2025 CultureMap Austin Tastemaker Awards, in the Chef of the Year and Restaurant of the Year categories, respectively.
The James Beard Foundation hasn't yet compiled data on where each author is from, but by CultureMap Austin's count, Griffiths is the only Texas author represented. Other nominees may have moved through Austin, such as University of Texas at Austin alum Joe Yonan, who is recognized for Mastering the Art of Plant-Based Cooking: Vegan Recipes, Tips, and Techniques.
Austin also has one finalist in the running for the higher-profile categories, which have to do with food and drink service. Arjav Ezekiel of Birdie's is nominated for Outstanding Professional in Beverage Service.
Winners of the James Beard Media Awards will be announced at a ceremony in Chicago on Saturday, June 14. Then restaurant and chef winners will be announced Monday, June 16.
