San Francisco's famed Midnite Bagel rolling in for Austin residency
Austinites will soon be able to experience one of San Francisco's most beloved bagel shops right in their own backyard. The Loren at Lady Bird Lake revealed that Midnite Bagel will be joining in the hotel's new Cafe Collaboration Series, showcasing joint ventures with esteemed culinary partners.
Following a successful month featuring New York City's Milk Bar, The Loren says in a release it is excited to host Midnite Bagel, celebrated by Bon Appétit as one of "The Very Best Bagels in the US.” The Cafe will showcase Midnite Bagel's acclaimed selection of bagels, sandwiches, bread, and desserts in the upcoming month as grab-and-go options.
The secret behind Midnite Bagel's irresistible flavor? A meticulous 24-hour fermentation process using a sourdough starter and premium Pacific Northwest flour, perfected by founder Nick Beitcher, formerly at the helm of Tartine Bakery's bread program. This technique promises a bagel experience that's not only delicious but also boasts a longer shelf life and improved digestibility.
Midnite Bagel’s offerings will include:
- Everything, plain, "Buckwheat Black," and cinnamon raisin bagels
- Cream cheese spreads like plain, jalapeño, and scallion
- Smoked salmon and veggie sandwiches
- Buckwheat black sesame and pumpernickel breads
- Buckwheat banana muffins, the "Everything Cookie," and "Midnite Granola"
A portion of proceeds will support the Loren Roots Imperative, the brand's nonprofit combating climate change (and offsetting the hotel's own footprint).
“We’re so excited to partner with Nick Beitcher and bring his delicious bagels from Midnite to our Cafe Collaboration Series at The Loren,” says Loren chef de cuisine Christian Grindrod in the release. “We look forward to bringing a taste of San Francisco to Austin.”
The bagel shop is no stranger to alternative service models. It took some time to find its footing, with a quickly-closed brick-and-mortar as chronicled by Eater SF. But Beitcher told the Cali reporters that the unconventional bagels were more than equipped for unconventional business moves, and he's proved himself right as the brand has continued to grow through online sales, farmers markets, and other stores.
The Midnite Bagel collaboration will run from January 1 through the end of the month, 7 am until close, at Cafe at The Loren. Everything bagels and schmears await.
