It's a Hanukkah miracle: local bagel shop Rosen’s Bagel Co. has announced that it will open a third location at Windsor Park, an East Austin neighborhood just north of Mueller. The new shop will open at 5900 Westminster Drive in Windsor Commons in spring 2026.
Rosen's started as a pop-up that became popular at coffee shops and graduated to brick and mortar in 2022. It's now known for its no-nonsense, semi-East Coast approach to bagels, embracing the “schmear,” house-cured lox, and typical deli menu with a few small Texan twists. The bagels are hand-rolled, then boiled and baked, cream cheese mixes are made in house, and there is a healthy but not-overwhelming menu of mostly breakfast sandwiches to choose from.
The new location will continue Rosen's espresso bar partnership with the local Tiny House Coffee Roasters. The shop starts with espresso at 6:30 am and will move on to canned beer, wine, and sparkling wine as the day progresses. A press release teases more local food partnerships to come.

“Windsor Park represents everything I love about Austin,” said "chief bagel officer" Tom Rosen in the release. “It’s a close-knit, family-oriented community with a strong local spirit, and opening a shop here feels like a natural next step. I’m excited to create a welcoming neighborhood space where people can gather over great bagels.”
Partner Joe Carr rounds out the ownership team, who have an extra pep in their step after a $10,000 grant from the Food & Wine Alliance. According to the release, it was awarded in light of "the company’s commitment to responsible sourcing and sustainability," and it will be used to expand the bake-at-home bagel dough product fRosen’s.
Existing Rosen's locations are located on Burnet Road near The Domain and in a small standalone building at Republic Square downtown. The new location is in a long building behind Hank's Austin and across the street from Austin Public Library's Windsor Park Branch.
There are currently no hours set for the new shop. Existing Rosen's shops open at 7 or 8 am and close at 2 or 3 pm. Customers will be able to place orders for delivery, pickup, and catering.
