Bartender Secrets
You won't believe the secret ingredient in this unusual Austin cocktail
When Vox Table opened earlier this year, foodie fanatics went wild. Set in a modern space in the Lamar Union complex, the farm-to-table, small-plate restaurant utilizes French and Spanish influences to craft epicurean concoctions that are truly out of this world.
Equally impressive is Vox’s bar program, helmed by Beverage Director Travis Tober. Using unusual ingredients is Tober’s forte, introducing guests to out-of-the-box cocktails that are anything but ordinary.
Riffing off the Kurt Russell classic Big Trouble in Little China comes Tober’s inventive Big Trouble in Little Cynar.
“I really like [the cocktail] because we use Jäger spice in it, and you don’t see that very often, if ever, on cocktail menus,” says Tober.
Jäger and elevated dining is certainly an uncommon combination, but Tober pulls off this creative cocktail by incorporating oddly delicious complementary ingredients like thyme-infused Cocchi Americano and artichoke liqueur Cynar. Pour this beverage over a Clinebell ice cube, sourced from a local ice-making company, and you have Big Trouble in Little Cynar.
Watch Tober craft this playful cocktail in the video above, then pop into Vox Table to try one of his clever cocktails. We also suggest the Rhu-Tang Clan and Herb is the Word.
