Austin loves a health-conscious restaurant, and The Well's fourth location is proof. The new restaurant is opening at 409 W. Monroe St. in the Bouldin Creek neighborhood this spring.
The Well, part of Nova Hospitality, first opened in 2020, opening more locations at a fast clip since then. It's become known for its dietary accommodations, ensuring that most, if not all Austin diners can enjoy a meal out in a chic setting. The kitchen is completely gluten-free, and only uses olive, coconut, and avocado oils. The menu also excises dairy, soy, refined sugar, and GMOs (a very broad label).
Some offerings are a fun flourish more than a dietary need, including some wellness shots and specialty drinks. The Well also serves coffee, smoothies, alcoholic and non-alcoholic cocktails, and more.
On the meatier side, guests can look forward to grass-fed Texas Wagyu steak frites with chimichurri pesto, sustainably-sourced fish, pecan chicken salad sandwich made with pasture-raised poultry, and overnight-simmered bone broth.
"There is nothing better than watching someone experience The Well for the first time — that moment when they realize food that's good for you can also be the best thing they've eaten all week," said managing partner Nicole Pfromm in the press release. "Bouldin is full of people who care deeply about what they eat and how they gather, and I cannot wait to meet them at the table."
The roughly 3,000-square-foot space fits 85 seats inside, a 24-person dining room, and an outdoor dining area. It was all designed by Rituals Creative Studio, which also worked on Devil May Care and TenTen, two other concepts under Nova Hospitality.
"Bouldin Creek is a wonderful Austin neighborhood that has held onto its character and sense of community for decades," said VP of restaurants and development at Nova, Jon Oh, in a press release. "Residents are thoughtful, locally-minded, and deeply connected to where they live and that's something we have enormous respect for."
The Well Bouldin will be open daily from 8 am to 9 pm. Weekend brunch will be available Saturdays and Sundays from 8 am to 3 pm. Catering is available, and the full menu can be delivered via major third-party services.
