Acclaimed barbecue joint bucks into East Austin with Tex-Mex taco truck
The opening date announcement of Batch Craft Beer & Kolaches' new microbrewery came with a tantalizing surprise: The Micklethwait Craft Meats team was branching out from barbecue with a food truck located on the sprawling Manor Road compound.
After a month of anticipation, owner Tom Micklethwait has finally revealed his opening plans for the spot. According to a release, Taco Bronco will open at 3220 Manor Rd. in winter 2019/2020.
Micklethwait is working with longtime friends and colleagues Ren Garcia and Javier Montesinos on the truck inspired by Texas comfort food, from homestyle Tex-Mex to the fare offered at small-town taquerias.
But that doesn’t mean that Taco Bronco has given up on barbecue entirely. The menu centers on meats such as barbacoa; pork carnitas; and South Texas boar sausage, all smoked on an onsite pit. The plates will be served with locally made tortillas and scratch sides like spicy red beans, traditional Spanish rice, roasted calabacitas, and jicama grapefruit slaw.
In addition to the larger entrees, the concept will also dish out a rotating menu of specialty tacos like lamb birria, mesquite-roasted poblano queso, and sandwiches and tortas. Plant-based options will include dishes including house seitan.
Taco Bronco will also allow the team to further its relationship with Batch. Micklethwait has been providing brisket for klobásníky (the meat-filled cousin of the kolache) since the East Austin shop debuted in August 2017. Smoked meats will be used for items in the bakery case, and brews will be created in homage to Taco Bronco ingredients.
The exact opening day will be announced at a later time; once open, the trailer will be open for dinner, Thursday through Sunday.
