Burn Baby Burn
New East Austin pizza joint and bar heats up Sixth Street with Roman-style pies
The self-proclaimed "Queen of Rainey Street" is heating up East Sixth Street with her latest endeavor, Burn.
Burn Pizza + Bar is the newest joint from local bigwig Bridget Dunlap and her group, Dunlap ATX. The restaurant, which opened last week, specializes in Roman-style pies with an emphasis on Italian cuisine.
Similar to the popular Neapolitan pie, Roman-style pizza offers a very thin crust — with burned edges — and generous toppings. At Burn, menu items pay homage to Dunlap ATX's other projects with offerings like The Clive ('nduja, fontina, mozzarella, and truffle oil), The 96er (broccoli and sausage), and Lustre's (chicory, olive, chili, and mozzarella).
Burn also serves meatier entrees and pasta dishes in addition to Italian-inspired desserts and a full bar. The regular menu will reflect central and southern Italy, but the kitchen promises a heartier taste of northern Italy during the winter.
The new East Sixth joint is open daily from 5 pm until midnight, with takeout options. This is the sixth project from Bridget Dunlap. Dunlap ATX is also in the process of opening a new Lustre Pearl on Rainey Street as well as a version on the east side.
